Tartelettes aux Noix

After another long Monday, I decided to see if there was an opening for the 8pm cake class at ABC Cooking.  There was a slot available for the 8pm class so off I went to de-stress.   In this class I learned to make Tartelettes aux Noix which translates to "Nut Tartlet".  It was pretty easy to make.  AND since the two other folks did not show up I had a private lesson. 

It was pretty easy to make.  I first made a pate brise again using cold flour, butter salt and very cold water.  The key again is to work quickly so the butter does not melt.  The filling was made with eggs, sugar, flour, almond powder, butter, vanilla and walnuts.  Before baking, we sprinkled two of them with powdered sugar so that filling crusts and has a shiny look. We also sprinkled pecan nuts, cashews, pumpkin seeds and pine nuts on top.  One and a half hours later, I had 5 mini Tartelettes aux Noix that were a whopping 374 calories each!
