Detox Meal No. 1

Detox is going well.  Cheated a bit last night cuz went to dinner with BFFs from knitting Genie and Chris.  Since it has been awhile enjoyed a fabulous non-allergenic meal with wine ( a no no).  But so far I'm finding it easy except that it is very difficult to find things that do not have corn syrup in it.  It seems almost everything made in America has corn syrup. 

Anyhow, for the 1st and 2nd day of my Detox, I had roasted wild salmon, Haiga rice and sauteed watercress from one of the best Chinese Cookbooks – The Joy of Chinese Cooking which is a classic.  The sauteed watercress is so easy to make and sooo good.  I found fresh locally grown watercress at Whole Foods which made it taste even better.  I could just eat the sauteed watercress with rice and be happy.  The salmon was simply roasted with salt, pepper and olive oil.  Haiga rice is in between brown and white rice.  The rice is carefully milled so the rice germ is preserved.  Thus it tastes very close to white rice but has a lot of the benefits of brown rice.  While I still feel sluggish and tire easily, I'm hoping by the time I go on vacation next week, some of my energy will come back.
